ITAKARAE UUT – Corn Powder –
- ltakrae Uut Corn(main ingredient)
- Masin Salt
- Lesu Traditional wood grinder
- Alu Long wooden stick (used to powder the corn in the Lesu)
- Babu’u Traditional Large baskets woven with palm leaves
- Ukarak Palm leaf woven basket
- Tasu frying pan
- Ha’i plate
- Nuruwakin Traditional long-handled spoon made of wood and coconut shells
- Ituran-hatin Traditional cooking stove
- Ai-rarotun Firewood
- Rili no tau ku’ak itakrae nulin namagetun lalalan.
Select and prepare good, and dried corn.
- Ruga itakrai musan namagetun doi ni nulin-isin no rasai rese nehe gamain taiak.
Remove the corn from its cob and take out defective ones.
- Hase itakrae musan namagetun runa moras.
Wash the selected corn properly until it is clean.
- Suri runa namagetun.
Leave it for a few minutes until it dries out.
- Rili ai-namagetun roko rodi sena ltakrae.
Collect the sufficient firewood.
- Guut ai-namagetun roko rodi sena ltakrae.
Prepare the fire for cooking.
- Tau tasu la’a mia ituran-hatin no suri runa banas tikili’ik.
Place the frying pan in the prepared cooking fire.
- Wakar ltakrae musan namagetun mamoras la’a tasu ralan.
Put the corn into the frying pan and add a little amount of cooking salt.
- Sena ltakrae musan rodi nuruwakin nahit namadahan lalalan. Tebaluri suri runa nogan.
Frying/Roasting the corn for as long as it is needed until it is cooked properly.
Make sure not to over cook.
- Wainhira namadahan ba, rasai itakrae doi tasu no tau mia lesu.
When it is ready, take the corn out and put them in Lesu.
- Hai ltakrae musan namadahan rodi alu nahit rahun lalalan.
Start mashing the corn with Alu repeatedly for as long as it is needed until it become proper powder.
- Rasai ltakrae Uut rodi lesu ralan.
Take the corn powder out when it is ready.
- Nikit ltakrae Uut rodi babu’u.
Filter the powder using Babu’u. A technique called Nikit in local language, Galolen.
- Tau hali ltakrae Uut nehe gamain teke nahuk rahun lalan la’a mia lesu rodi hai nahatik nahit rahun lalan.
Put back the unmashed corn into the mortar and repeat the mashing process until all become proper powder.
- Wainhira ltakrae Uut rahun lalan ba, rasai no tau mia ukarak no here hali la’a mia ha’i roko rodi ra’an.
Baluri ra’an ltakrae Uut no waniwen, masi-minak, susuwen, utan-lale’en sasena r~hun, mu’u n~madahan· taik no hali leim usan sasena wo lalan robo.
When it is ready, take the corn powder out and put them in the plate and ready to be consumed with preferred flavors.
The corn powder can be served mixed with honey, sugar, fresh milk, cooked peanut powder, ripe banana or cooked pumpkin seeds depending on one’s preference and of course its availability within the household.
